It's fully biologically functional arm (albeit having a beating heart).
For healing magic to be practiced on it it has to replicate an actual organ as best is can, which I am assuming requires tendons and ligaments and bones.
Learning how to heal a jelly arm won't help in in learning how to heal an actual wound. So my guess is it tastes like flesh.
